Pancakes Day 1

I really enjoy making all varieties of healthy(ish) pancakes, and often tweak recipes. Hence the Pancake Diaries, to chronicle my circular creations!

Recipe of the Day
2 eggs
1/2 c cottage cheese
1/2 c rolled oats
2T hemp seeds
Lemon zest (or 3" peeled outer rind, for Vitamix)
1/8 t baking soda

Cook in simmering canola oil over medium heat, at least 1 minute on each side until a light golden brown. Flip when surface is bubbly and somewhat dry.

VERDICT:
These were good with syrup but I didn't have much left. I tried some peanut butter and (Straus) greek yogurt; the former was good and a combo was ok, but I wouldn't have this yogurt alone again with this recipe.
